When restaurants provide meals for staff

The author went around to many of New York's favorite restaurants,
and ate with the staff during the "Family Meal". Erin Bremer ate
with the bussers, the cooks, the servers, the managers, the chefs and
the dishwashers. Among the restaurants she visited were Gramercy
Tavern, Chanterelle, Buddakan, Mercer Kitchen, Centovini, Allen &
Delancey and Thomas Keller's Per Se.
