Even after cooking in restaurants for years, this article was the best introduction for learning how to cook beef and steaks properly.  The "secret" to the recipe, is getting the moisture (i.e. the water) out of the meat with salt and aging.  The result is a more tender and juicier cut of delicious steak.

Pitchfork is a website that does a great job in highlighting new, hip, alternative and/or independent music.  I don't have time to follow their every move, but their year end wrap-up is great.  For me, it's a great way to discover some great music, and it keeps me up to date with what the cool kids were listening to last year.
