101 Simple Meals Ready in 10 Minutes or Less

Summer Express: 101 Simple Meals Ready in 10 Minutes or Less - New York Times

My lovely wife is away for the week. Now I love to cook, and I'm used to doing it often, but it's not always fun to cook for just myself and it can get tedious on a daily basis.

Mark Bittman comes through with another great Food article in the New York Times with lots of tasty simple meals for the summer. Some of the best recipes or meal plans include:

#18 "Stir-fry a pound or so of ground meat or chopped fish mixed with chopped onions and seasoned with cumin or chili powder. Pile into taco shells or soft tacos, along with tomato, lettuce, canned beans, onion, cilantro and sour cream. " Delicious tacos!

#21 "While pasta cooks, combine a couple cups chopped tomatoes, a teaspoon or more minced garlic, olive oil and 20 to 30 basil leaves. Toss with pasta, salt, pepper and Parmesan. " -That's a personal favourite!

#31 "Fast chile rellenos: Drain canned whole green chilies. Make a slit in each and insert a piece of cheese. Dredge in flour and fry in a skillet, slit side up, until cheese melts. " I've never even thought of making that before!

#57 "Dip pork cutlets in egg, then dredge heavily in panko; brown quickly on both sides. Serve over lettuce, with fresh lemon, or bottled Japanese curry sauce. " - Yum! Japanese tonkatsu.

#59 "Brown bratwursts with cut-up apples. Serve with coleslaw." Interesting, maybe I'll try that tonight.

Sure, some of the "simple meals" are easy to make, but not so practical if you don't have the ingredients on hand, such as #12: "Boil a lobster. Serve with lemon or melted butter. " Overall, this list is GREAT for sunny days in the kitchen when you run out of time and inspiration.

What spices should I use?

What Spices To Use
One of the things that confuses the people the most about cooking is how to season food appropriately. A lot of people don't know how to use spices, even though they are one of the easiest ways to improve flavour.

How do you cook with cumin? How about cilantro, fenugreek or marjoram? What's in Jamaican Jerk spice, curry powder or poultry seasoning? What Spices To Use dishes in one convenient and printable chart.

Remember that fresh always beats dried herbs and spices for flavour! Enjoy the cooking!

Yakiniku - Korean Barbecue marinade

A big shout out to Yakiniku. It's Korean Barbecue, translated into Japanese. It's my birthday today, and I'm heading out with my friends for some delicious yakiniku at a restaurant in Vancouver.

The best recipe for a yakiniku marinade (that I just found but haven't tried) is:

2 tb sesame seeds
1 ts hot red pepper
1 ts minced garlic
1/2 c soy sauce
1/4 c sugar
1 ts rice vinegar

Thinly slice your beef, chicken or pork, and marinate it for at least 30 minutes. Yummy!!

Mega News Aggregator

popurls.com

This is my favourite site of 2006.

Popurls.com is a news website that doesn't have any reporters; it's a news aggregator. It grabs the current top 10 news headlines from Google news, Digg, Wired magazine, Yahoo news, Netscape, Fark, NowPublic as well as the top entries on del.icio.us, Flickr, YouTube and more. This means you get hundreds (thousands?) of links to bleeding edge news stories from everywhere on the web. Harness the power of web users finding the best news stories for you.

It's my home page in my browser, and I skim through it every time I open a new window. I have often seen news stories broken here first, literally DAYS before I read them in the local newspaper. The site is well designed, customizable, and allows for fast skimming.

Congratulations! You are now up to date, and have your finger on the pulse of the internet.

Happy New Year!
